Everything that is done in the cellar starts with what happens in the vineyard with how Laetitia varietals are made. Specializing in producing sparkling wines and using the only Coquard grape presses in North America, Laetitia has attracted wine- and specifically champagne- aficionados to its winery for decades.
However, good wine is often paired with good food, which is why Laetitia hosts special Cellar Dinners every so often. Held in between the wine barrels of Laetitia’s cellar, Head Winemaker Eric Hickey hand-picks vintage bottles to enjoy with incredibly rich dishes prepared by Ember’s Brian Collins in an intimate, family-style meal. Afterwards, Cellar Dinner guests are escorted to the dessert lounge to finish the evening with a variety of sweets to go along with Laetitia’s revered dessert wines. Laetitia’s next Cellar Dinner will be held on April 29, 2017 from 6:30-9pm. The cost is $150 (a discounted rate is available for those in Laetitia’s Wine Club) and you must be 21 or older to attend.
